Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1 cup water
  • 1 egg
  • 1 teaspoon salt
  • 6 green onions, cut into 2-inch pieces
  • 1/2 cup shrimp, peeled and deveined
  • 1/2 cup squid, cleaned and sliced
  • 2 tablespoons vegetable oil

Instructions
 

  • Prepare the Ingredients
    Start by washing the shrimp and squid thoroughly. Pat them dry with a paper towel.
    Slice the green onions into 2-inch pieces.
  • Make the Batter
    In a medium bowl, combine 1 cup of all-purpose flour, 1/2 cup of rice flour, and 1 teaspoon of salt.
    Add 1 cup of water and crack in the egg. Mix until you have a smooth batter with no lumps.
  • Combine Seafood and Vegetables
    Add the prepared shrimp, squid, and green onions to the batter. Mix until everything is well-coated.
  • Cook the Pancake
    Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
    Pour half of the batter into the skillet, spreading it out evenly.
    Let it cook for about 4-5 minutes or until the edges turn crispy and golden.
    Carefully flip the pancake using a spatula, and cook the other side for another 4-5 minutes.
  • Serve
    Transfer the cooked pancake to a plate. Repeat the process with the remaining batter, adding more oil if needed.
    Serve hot with a side of soy dipping sauce.
